For best results, trim away excess fat and chill meat in the fridge. Always place a cutting board under the meat to protect countertops. Cover meat with plastic wrap to keep it from sticking to the Pounder. Firmly strike the cut with the flat surface of the Pounder, working thicker areas more and thinner areas less on both sides.
